Cooking time

Ingredients

  • 1 tablespoon olive oil

  • 1 stick butter, divided

  • 2 pounds skinless, boneless chicken breasts

  • 2 garlic cloves (or 1 tsp garlic powder)

  • 1 ½ teaspoons chili powder

  • salt and ground black pepper to taste

  • ¾ cup chicken broth

  • 2 cups heavy whipping cream

  • 4 oz cream cheese

  • 1 ½ tablespoons onion powder

  • 2 teaspoons cumin

  • 1 teaspoon hot sauce

  • 1 ½ cups grated Monterey Jack cheese

  • 2 (4 ounce) cans chopped green chilies

Instructions

  1. In your favorite skillet, heat one tablespoon of oil and the 2 tablespoons butter on medium heat. Saute garlic in the butter.

  2. While the butter melts, season the chicken with the chili powder, salt and pepper. Cook the chicken on both sides to brown it. Be sure you cook it thoroughly (10-15 minutes total cook time, depending on the thickness of the chicken.)

  3. When finished cooking, put the chicken on a plate to cool. When cool, shred chicken with two forks.

  4. In your favorite large pot, add 6 tablespoons butter, chicken broth, and heavy cream. Cook until it melts together. Add the onion powder, cumin and hot sauce, Bring to a simmer then season with salt and black pepper.

  5. Once everything is melted together and combined nicely, add the shredded chicken, cheese and green chiles.

  6. Reduce heat to low and simmer for 20 minutes, stirring occasionally.

A serving of soup is about 475 calories and 5 net carbs.

Keto White Chicken Chili Variations

  • Cheese: Swap Mexican cheese (or any other cheese) for the Monterey jack for a different taste.

  • Protein: Instead of chicken you can make this with turkey, tofu or even beef in this chili. It is also worth noting that you can substitute chicken thighs for the chicken breasts for a richer flavor.

  • Seasoning: Some different seasonings to try include oregano, cayenne pepper, and cilantro.

  • Veggies: Dice up some bell peppers, jalapeños, cauliflower or another veggie to add some flavor and nutrition to the chili.

Can You Thicken White Chicken Chili?

One way to thicken chili is to use a bit of xanthan gum. You can also toss a little cauliflower rice into the soup. It will absorb some liquid, thus thickening it.
