Ingredients

  • 1/4 cup FiberYum tapioca fiber

  • 1/2 cup apple cider vinegar

  • 1/3 cup sugar-free ketchup

  • 1/3 cup water

  • 2 tbsp soy sauce

  • 1 tsp sesame oil

  • 1/4 tsp Xanthan gum

Instructions

  1. Assemble the ingredients.

  2. Combine sesame oil and Xanthan gum in a medium saucepan, stirring constantly until combined. After this, turn the saucepan on low.

  3. Whisk in the apple cider vinegar.

  4. Pour in the water, soy sauce, ketchup and sweeteners. Continue to whisk.

  5. Turn the saucepan up to medium heat until the sauce boils.

  6. Reduce to a simmer and cook until thick.

This delicious keto recipe is quick and easy for busy weeknight meals.

Ingredients

  • 2 pounds of boneless chicken cut into strips (chicken breasts or chicken thighs)

  • Asian medley veggies (16 ounces)

  • 1 pepper (orange, red or yellow)

  • Mushrooms (8 ounces, sliced)

  • Sweet and Sour Sauce

  • Cauliflower rice

  • Olive oil

Instructions

  1. Pour 2 tablespoons oil in a wok or large pan.

  2. Add chicken. Cook until almost completely cooked.

  3. Add the medley of vegetables and pepper. Cook until almost complete.

  4. Add sliced mushrooms.

  5. While the veggies cook, mix up the sweet and sour sauce (recipe above).

  6. Cook the cauliflower rice.

  7. Serve the stir-fry over the cauliflower rice.
